Chill glass

Place a coupe or martini glass in the freezer for a few minutes or fill it with ice water to chill while you build the drink.

Build and stir

Fill a mixing glass or small pitcher with plenty of ice (about 1 cup). Pour in 2 oz Old Raj Gin (or Absolut Elyx Vodka) and 0.5 oz Gonzalez Byass Extra Seco Vermouth. Add 3 dashes of house orange bitters.

Stir to chill and dilute

Using a bar spoon, stir the mixture briskly for 20–30 seconds (about 20–30 full turns) until the outside of the mixing glass feels very cold. This properly chills and dilutes the cocktail.

Prepare garnish

While stirring, use a vegetable peeler or sharp knife to cut a 1½–2 inch lemon twist (avoid too much pith). Express the oils by holding the twist over the chilled glass and giving it a sharp pinch so the citrus oil sprays over the drink.

Strain and serve

Discard ice or water from the chilled glass. Using a julep or Hawthorne strainer, double-strain the stirred cocktail into the chilled coupe or martini glass.

Finish

Garnish with the expressed lemon twist by wiping the rim with the peel and placing the twist on the rim or dropping it into the drink. Serve immediately.
