Prepare crab mixture

Check the lump crabmeat for shells and gently pick through with your fingers. In a large bowl, combine mayonnaise, egg, Dijon mustard, Worcestershire sauce, Old Bay, lemon zest, lemon juice, chopped parsley, sliced scallions, salt, and pepper. Stir until smooth.

Fold in crab and breadcrumbs

Gently fold crabmeat into the mayonnaise mixture, taking care not to break up lumps. Sprinkle in the breadcrumbs and fold just until mixture holds shape—do not overmix. If mixture is too wet to form, add up to 2 tablespoons more breadcrumbs.

Form patties and chill

Portion mixture into 8 (about 3-ounce) cakes or 4 larger cakes. Use a ring mold or your hands to form compact patties about 2.5–3 inches wide and 3/4 inch thick. Place on a tray, cover, and refrigerate 30 minutes to firm.

Pan-fry crab cakes

Heat a large skillet over medium heat. Add butter and oil. When sizzling, add crab cakes (don’t overcrowd) and cook 3–4 minutes per side until golden brown and internal temperature reaches 145°F (or hot throughout). If cakes brown too quickly, lower heat and cover loosely to ensure they heat through. Transfer to a warm plate and keep in a low oven while finishing remaining cakes.

Shishito Emulsion

Char shishitos

Char the shishito peppers in a heavy skillet over high heat, or roast under a broiler, until blistered on all sides (about 4–6 minutes). Allow to cool slightly, then remove stems.

Blend emulsion

In a blender or food processor, combine charred shishitos, garlic clove, mayonnaise, Greek yogurt, lime juice, olive oil, smoked paprika and salt. Puree until smooth. If the emulsion is too thick, add 1 teaspoon of water to reach a drizzling consistency. Taste and adjust salt or lime as needed. Transfer to a squeeze bottle or small bowl.

Buttermilk Lime Crema

Whisk together buttermilk and sour cream until smooth. Add lime zest, lime juice, honey, salt, and pepper. Taste and adjust seasoning. Chill until ready to serve. The crema should be pourable but not watery—if too thin, stir in a little more sour cream; if too thick, add a splash more buttermilk.

Assembly & Garnish

Plate crab cakes

Place blue corn tortilla chips on the serving plate as a bed or use 4-inch toasted blue corn rounds beneath each cake. Set a warm crab cake on each or multiple small cakes on a large shared platter.

Dress and garnish

Spoon or pipe a line of buttermilk lime crema alongside or over each crab cake. Drizzle shishito emulsion over the cake (about 1 teaspoon per cake) and finish with microgreens or chopped chives. Serve with lemon wedges on the side for fresh squeezing.

Serve

Serve immediately while crab cakes are warm and the chips are crisp. Provide extra shishito emulsion and crema on the side if desired.
