Urfa Chile–Infused Honey (make ahead)
Infuse honey
Combine 1/2 cup honey and 1 tsp whole or crushed Urfa chile in a small heatproof jar. Warm gently in a double boiler or microwave for 20–30 seconds until loosened (do not boil). Stir, cover, and let steep at room temperature for at least 2 hours, preferably overnight. Taste; if you want more heat, add an additional 1/4–1/2 tsp Urfa and steep another hour. Strain through a fine mesh sieve into a clean jar to remove solids, pressing to extract honey. Store refrigerated for up to 2 weeks. Bring to room temperature before using in cocktails.
Cocktail
Prep glass and garnish (optional)
If desired, rim the serving glass lightly with grapefruit juice and dip into a pinch of coarse or smoked sea salt to add a savory edge. Chill the glass in the freezer or with ice water while you build the cocktail.
Combine ingredients
In a cocktail shaker, add 2 oz Larceny Bourbon, 1/2 oz spiced rum, 3/4 oz fresh grapefruit juice, 1/2 oz fresh lemon juice, and 3/4 tablespoon of the prepared Urfa chile–infused honey.
Garnish and aroma
Express the oils of a grapefruit twist over the drink by holding the twist skin-side down above the glass and giving it a quick squeeze, then run the twist around the rim and drop it in or perched on the glass. Lightly slap the rosemary sprig between your palms to release aromatics and rest it on the drink as a garnish. The rosemary also benefits from a quick torching for a smoked aroma—briefly singe the tip and then wave it above the glass (optional).
Taste and adjust
Taste the cocktail. If you'd like it sweeter, add another 1/4 tbs Urfa honey and stir briefly. If it needs more brightness, add 1/4 oz lemon or grapefruit juice and gently stir.
