Clarify butter and prepare

Melt the 6 tablespoons of unsalted butter in a small saucepan over low heat until foaming subsides. Skim foam and keep warm. Alternatively, melt in microwave in short bursts and keep warm. Measure out 1 teaspoon cold water and set aside.

Whisk yolks

In a heatproof bowl (or the top of a double boiler), whisk together 3 large egg yolks, 1 tablespoon fresh lemon juice, 1 teaspoon cold water, and 1 teaspoon Dijon mustard until slightly thickened and uniform.

Cook over gentle heat

Place the bowl over barely simmering water (double boiler) making sure the bottom of the bowl does not touch the water. Whisk constantly until the yolks become pale and slightly thickened (about 2–3 minutes).

Emulsify butter

Remove bowl from heat. Very slowly drizzle the warm clarified butter into the yolks while whisking continuously to form a smooth emulsion. If sauce becomes too thick, whisk in a few drops of warm water to loosen. Season with 1 teaspoon kosher salt and 1 teaspoon white pepper or cayenne. Keep warm in a thermos or over very low heat, whisking occasionally.

Prepare dredging stations

Set out three shallow bowls: one with 1 cup all-purpose flour seasoned with 1/2 teaspoon salt and 1/2 teaspoon black pepper, one with eggs beaten with 2 tablespoons milk, and one with 1 cup panko mixed with 2 teaspoons Old Bay (or seafood seasoning).

Season crabs

Pat the 4 cleaned soft-shell crabs dry with paper towels. Lightly season both sides with remaining 1/2 teaspoon kosher salt and remaining 1/2 teaspoon black pepper.

Dredge crabs

Working one at a time, dust each crab in the seasoned flour, shake off excess, dip into the egg wash, then press into the panko mixture until evenly coated. Place on a tray and repeat with remaining crabs.

Fry crabs

In a large skillet, heat 1 cup vegetable oil over medium-high until it registers about 350°F (175°C) or a small piece of bread sizzles and browns in 30–40 seconds. Fry crabs, two at a time if needed, 2–3 minutes per side until golden brown and crisp. Transfer to a wire rack set over a baking sheet and keep warm in a 200°F (95°C) oven while finishing others.

Toast muffins

Split the 4 English muffins and lightly butter each half with 2 tablespoons unsalted butter. Toast in a skillet or under a broiler until golden and crisp. Keep warm.

Poach eggs

Bring a wide, shallow saucepan of water (about 4 cups) to a gentle simmer. Add 1 tablespoon white vinegar and 1 teaspoon sea salt. Reduce to a very gentle simmer (no rolling boil). Crack one egg into a ramekin. Using a spoon, stir the water to create a gentle whirlpool and slide the egg into the center. Poach 3–3.5 minutes for a runny yolk. Remove with a slotted spoon and briefly drain on paper towel. Repeat with remaining eggs.

Assembly & Garnish

Assemble Benedicts

Place a toasted English muffin half on each plate. Top each half with a fried soft-shell crab. Gently place a poached egg on top of each crab.

Finish with hollandaise

Ladle or spoon warm hollandaise sauce over each poached egg (about 2–3 tablespoons per portion).

Garnish and serve

Sprinkle each plate with thinly sliced fresh chives, a pinch of additional Old Bay if desired, and a few microgreens or baby arugula alongside. Serve immediately with lemon wedges for squeezing.
