Prepare tomatoes

Wash tomatoes and slice into 1/3- to 1/2-inch thick rounds. Pat slices dry with paper towels to remove surface moisture. Arrange on a tray and season both sides lightly with 1/2 teaspoon of salt.

Set up dredging stations

Place the 1 cup all-purpose flour mixed with 1/2 tsp garlic powder, 1/2 tsp smoked paprika, 1/2 tsp black pepper, and 1/2 tsp salt in a shallow dish. In a second shallow bowl whisk together buttermilk and eggs until smooth. In a third shallow dish combine cornmeal, panko (if using), 1/2 tsp smoked paprika, 1/4 tsp cayenne (if using), and a pinch of salt.

Dredge the tomato slices

Working in batches to avoid crowding, dredge each tomato slice first in the seasoned flour, shaking off excess, then dip into the buttermilk-egg mixture, allowing excess to drip off, and finally press into the cornmeal/panko mixture so both sides are well coated. Place coated slices on a wire rack while you heat the oil.

Heat oil and fry

Pour vegetable oil into a large skillet (cast-iron preferred) to a depth of about 1/4–1/2 inch and heat over medium-high until it reaches about 350°F (175°C) or a small piece of breadcrumb sizzles immediately. Reduce heat to medium. Fry the coated tomato slices in a single layer (do not overcrowd) for 2–3 minutes per side, until deep golden brown and crisp. Use tongs to flip carefully.

Drain and finish

Transfer fried tomatoes to a paper towel-lined plate or wire rack to drain and season immediately with a light sprinkle of salt. If desired, add 1 tablespoon unsalted butter to the hot skillet and spoon the melted butter over the tomatoes for an extra sheen and flavor.

Sugo Rosa Sauce

Sauté aromatics

Heat 2 teaspoons olive oil in a saucepan over medium heat. Add the finely chopped onion and cook, stirring occasionally, until translucent, about 4–5 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.

Simmer tomatoes

Add the 14 oz passata or crushed tomatoes to the pan, stir to combine, and bring to a gentle simmer. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Reduce heat to low and simmer uncovered for 10–12 minutes to concentrate flavors.

Finish sauce

Stir in heavy cream and grated Parmesan, simmer gently for 2–3 minutes until the sauce is slightly thickened and creamy. Taste and adjust seasoning. Stir in chopped basil (optional) just before removing from heat. Keep warm until ready to serve.

To Finish and Serve

Place a spoonful of warm sugo rosa sauce on each serving plate or on a shared platter. Arrange 3–4 fried green tomato slices per serving on top of the sauce so some sauce peeks out at the edges.

Scatter crumbled blue cheese evenly over the fried tomatoes while still warm so it softens slightly. Garnish with chopped parsley and serve with lemon wedges on the side for optional brightness.

Serve immediately so tomatoes remain crisp. Provide extra sugo rosa and blue cheese at the table if desired.
