Method

Bread

1

Preheat and prepare pan

Preheat the oven to 375°F (190°C). Lightly grease a 9x5-inch (or similar) loaf pan with butter or nonstick spray, or line with parchment leaving an overhang for easy removal.

2

Mix dry ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined and aerated.

3

Combine with beer

Make a well in the dry ingredients and pour in the cold beer. Using a rubber spatula or wooden spoon, fold until just combined. The batter will be thick and slightly lumpy — do not overmix to keep the crumb tender.

4

Add melted butter

Fold in 1 tablespoon of the melted butter into the batter to incorporate. Reserve the remaining tablespoon for brushing the top.

5

Transfer to pan and top

Spoon the batter into the prepared loaf pan and smooth the top with an offset spatula or back of a spoon. Brush the remaining melted butter evenly over the top of the batter to encourage browning.

6

Bake

Bake in the preheated oven for 45–55 minutes, or until the top is deep golden brown and a skewer inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with foil for the last 10–15 minutes.

7

Cool

Remove the pan from the oven and let the loaf cool in the pan for 10–15 minutes. Run a knife around the edges, then lift the loaf out using the parchment overhang (or invert onto a rack) and cool for an additional 20–30 minutes before slicing. Serving warm is preferred but slightly cooled is easier to slice.

Honey Butter

8

While the bread bakes or cools, make the honey butter. In a medium bowl, beat the softened butter with a hand mixer or sturdy fork until smooth and creamy (about 1–2 minutes).

9

Add the honey and salt, then continue beating until fully incorporated and fluffy, about 30–60 seconds. Stir in lemon zest if using. Taste and adjust honey or salt to preference.

10

Transfer the honey butter to a small serving dish and refrigerate briefly if you prefer a firmer spread. Serve alongside warm slices of beer bread.
