Boil Noodles

Bring 2 liters of water to a rolling boil in a large pot. Add 1 tablespoon kosher salt. Add 12 oz dry noodles and cook according to package directions until al dente (usually 3–8 minutes depending on noodle). Stir occasionally to prevent sticking.

Reserve 1/2 cup (120 ml) of the hot cooking water before draining — this will be used to adjust the sauce consistency. Drain noodles in a colander and rinse briefly with warm water to stop cooking and remove excess starch (skip rinsing if you prefer a hotter, silkier finish).

Sesame Sauce

Combine Base Ingredients

In a medium mixing bowl, place 4 tablespoons tahini, 3 tablespoons light soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 2 tablespoons warm neutral oil, and 1 teaspoon sugar or honey. Whisk or stir vigorously until smooth. The warm neutral oil helps loosen the tahini and build a glossy emulsion.

Add Aromatics & Adjust

Add 2 minced garlic cloves, 1 teaspoon grated ginger, and 1 teaspoon chili paste (if using) to the bowl. Whisk in 3 tablespoons reserved hot noodle water a little at a time until the sauce reaches a pourable but still creamy consistency. If too thick, add more hot water 1 tablespoon at a time. Taste and adjust: add 1/2 teaspoon more soy for saltiness, a dash of rice vinegar for brightness, or a pinch more sugar if bitter.

Aromatics & Mix-ins

Prepare vegetables: thinly slice scallions, separating whites from greens. Julienne cucumber and carrot if using. Reserve 1 tablespoon of the scallion whites to warm briefly in a hot pan if you prefer softened flavor.

If using toasted sesame seeds and chopped nuts as mix-ins, toast them lightly in a dry skillet over medium heat for 1–2 minutes until fragrant, shaking the pan to avoid burning. Remove from heat and set aside.

Assembly & Finish

Toss Noodles with Sauce

Place drained warm noodles back into the empty pot (off heat) or a large mixing bowl. Pour the prepared sesame sauce over the noodles. Add the scallion whites, julienned cucumber and carrot, and half of the toasted sesame seeds. Using tongs or two forks, toss vigorously until noodles are evenly coated and the sauce is absorbed, adding up to 2 additional tablespoons reserved hot water if needed to loosen the sauce.

Adjust seasoning: taste a strand and add salt (or soy) and pepper as needed. If you like a brighter note, squeeze a lime wedge over the noodles.

Plate and Garnish: transfer noodles to serving bowls or a platter. Drizzle 1 teaspoon toasted sesame oil over each serving (optional). Sprinkle remaining scallion greens, remaining toasted sesame seeds, and crushed peanuts or cashews. Garnish with chopped cilantro and additional chili paste or lime wedges on the side.

Serve immediately warm or at room temperature. Leftovers keep in an airtight container in the refrigerator for up to 2 days — refresh with a splash of warm water and a drizzle of sesame oil before serving.
