Prepare & Cook
Bring water to boil
In a medium saucepan, add 4 cups water and 1 tablespoon coarse kosher salt. Bring to a rolling boil over high heat.
Cook edamame
Add 1 cup frozen edamame (in pods) to the boiling water. Return to a brisk boil and cook for 4–5 minutes until pods are tender and beans inside are cooked through but still bright green. If using fresh edamame, cook 3–4 minutes.
Shock and drain
Immediately drain the edamame in a colander and rinse briefly under cold running water or transfer to a bowl of ice water to stop cooking. Drain well and pat dry with a kitchen towel or paper towels.
Season & Serve
Season
Place drained edamame in a serving bowl. Drizzle 1 teaspoon toasted sesame oil over the pods, toss gently to coat. Sprinkle 1 teaspoon flaky sea salt (adjust to taste). If desired, add 1 teaspoon freshly ground black pepper or 1 teaspoon crushed red pepper flakes and 1 teaspoon fresh lemon juice; toss again to combine.
Finish
Taste one pod and adjust seasoning if needed (more finishing salt, a touch more sesame oil, or a squeeze of lemon). Serve warm or at room temperature. To eat, squeeze the beans out of the pod with your teeth; do not eat the pod.
