Braised Oxtail

Season and brown
Pat oxtail pieces dry with paper towels. Season all over with 1 1/2 tsp kosher salt and 1 tsp black pepper. Lightly dredge each piece in 1/4 cup flour, shaking off excess. Heat 2 tablespoons oil in a heavy Dutch oven or large ovenproof pot over medium-high heat until shimmering. Brown oxtail in batches, 3–4 minutes per side, until deeply browned; transfer browned pieces to a plate.

Sauté aromatics
Reduce heat to medium and add diced onion, carrot, and celery to the pot. Cook, stirring occasionally, until softened and beginning to color, about 6–8 minutes. Add minced garlic and cook 30–45 seconds until fragrant. Stir in 2 tablespoons tomato paste and cook 1–2 minutes to remove raw flavor.

Deglaze and simmer
Pour in 1 cup red wine (or 1 cup beef stock if not using wine) and scrape up browned bits from the bottom with a wooden spoon. Let the wine reduce by half, about 3–4 minutes. Return oxtail to the pot along with any juices. Pour in 4 cups beef stock so the oxtail is mostly submerged. Add 1 tablespoon Worcestershire sauce, 3 thyme sprigs, 1 bay leaf, 1 teaspoon brown sugar (or molasses), and 1/4 tsp red pepper flakes if using. Bring to a gentle simmer.

Reduce sauce and shred
When oxtail is tender, remove meat pieces and set on a cutting board. Strain the braising liquid into a saucepan, pressing lightly on solids to extract flavor, then discard solids, thyme stems, and bay leaf. Skim fat from the surface of the liquid (or refrigerate briefly and remove solidified fat). Simmer the strained liquid over medium-high heat until reduced to a glossy sauce, about 10–15 minutes; taste and adjust seasoning. Shred the oxtail meat, discarding bones, and gently toss shredded meat in the reduced sauce to coat. Keep warm.

Cook pasta
Bring a large pot of salted water to a boil. Add 1 lb pasta and cook until al dente according to package instructions (usually 1 minute less than package). Reserve 1/2 cup pasta cooking water, then drain pasta and set aside.

Make roux and béchamel
In a large saucepan over medium heat, melt 4 tablespoons unsalted butter. Whisk in 1/4 cup flour and cook, whisking, for 1–2 minutes to form a blond roux. Slowly whisk in 3 cups whole milk and 1/2 cup heavy cream, bringing mixture to a gentle simmer. Cook, whisking occasionally, until slightly thickened, about 4–6 minutes.

Finish cheese sauce
Reduce heat to low and whisk in 2 oz cream cheese until smooth. Stir in 2 cups grated sharp cheddar and 1 cup Gruyère (or fontina) a handful at a time until melted and smooth. Whisk in 1 teaspoon Dijon mustard, 1/2 teaspoon smoked paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper. If sauce is too thick, whisk in reserved pasta water 1–2 tablespoons at a time to reach desired consistency.

Combine pasta and sauce
Add drained pasta to the cheese sauce and gently fold to combine, ensuring all pasta is coated. Keep warm over very low heat while you prepare topping and oxtail.

Prepare topping
In a small skillet, heat 1 tablespoon olive oil over medium heat. Add 1/2 cup panko breadcrumbs and toast, stirring frequently, until golden, 3–4 minutes. Remove from heat and stir in 1/4 cup grated Parmesan. Sprinkle breadcrumbs over mac if serving baked or stir into mac for extra texture.
Assembly & Finish

Portion mac and cheese into bowls or shallow serving dishes (serve 4). Top each portion with a generous mound of shredded braised oxtail, spooning some of the reduced braising sauce over the meat and mac for richness and gloss.

Garnish each bowl with 2 teaspoons chopped fresh parsley and sliced scallions. Add a crack of black pepper and hot sauce if desired. Serve immediately so the sauce is warm and the textures contrast (creamy mac, tender meat, crunchy breadcrumbs).

Storage and reheating: Store leftovers in separate containers (mac and meat separately) for up to 3 days in the refrigerator. Reheat mac gently with a splash of milk; rewarm oxtail in its sauce over low heat.
