Make simple syrup (if needed)

Combine and dissolve
Combine 0.5 cups granulated sugar and 0.5 cups water in a small saucepan over medium heat. Stir until sugar is fully dissolved and the mixture is clear, about 2–3 minutes. Do not boil. Remove from heat and cool to room temperature before using. Store refrigerated up to 2 weeks.

Add sugar and bitters
If using a sugar cube: place 1 sugar cube in a rocks glass and saturate with 2 dashes Angostura bitters and 1 dash orange bitters (optional). Muddle the sugar and bitters until the cube is mostly dissolved. If using simple syrup: add 0.5 tsp (adjust to taste) simple syrup to the glass and add the bitters, stir briefly to combine.

Add ice and chill
Add one large ice cube or a few large chilled ice cubes to the glass. Stir gently for about 20–30 seconds to chill and lightly dilute the drink. If using an oversized single cube or sphere, stir 15–20 seconds; if multiple large cubes, stir 20–30 seconds. The exterior of the glass should become slightly frosted.

Garnish and finish
Express the oils of an orange peel by holding the peel over the glass, skin side down, and giving it a firm squeeze so the oils spray onto the drink. Optionally run the peel around the rim of the glass. Drop the peel into the glass. Add a maraschino cherry if desired. Serve immediately.
