Make date paste
Place the pitted Medjool dates and hot water in a small bowl. Let sit for 5 minutes to soften. Mash with a fork or blend briefly (1–2 pulses in a mini-food processor) until a smooth paste forms. Stir in the lemon juice to brighten the flavor. If too thick, add up to 1 more teaspoon hot water to reach spreadable consistency.

Sweeten and loosen cheese
In a small bowl, mix the Greek yogurt or ricotta with 1 teaspoon honey until smooth and slightly loosened. Taste and adjust sweetness — this balances the dates and pear.

Assemble base layers
Spread about half of the date paste on each slice of toasted bread (about 1 to 1.5 tablespoons per slice). Spoon or spread a thin layer of the sweetened yogurt/ricotta (about 1 tablespoon) over the date paste, leaving a small border at the edges.

Arrange pear & finish
Fan pear slices attractively over each toast (3–4 slices per slice of bread). Scatter the toasted chopped walnuts or pecans evenly over the pears. Sprinkle the fresh lemon zest and a light pinch of sea salt flakes over each toast to lift flavors. Drizzle each toast with a small amount of extra-virgin olive oil or honey (about 1/2 teaspoon). Finish with a tiny pinch of freshly ground black pepper if using.

Serve immediately while toast is still crisp. Leftover date paste can be refrigerated in a sealed container for up to 1 week.
