Drink

  1. 1

    Chill glass and ingredients

If possible, chill the wine and Aperol beforehand. Place the serving glass (a large wine glass or stemmed goblet) in the freezer for 5–10 minutes or fill with ice while preparing to ensure the cocktail stays cold.

  2. 2

    Add ice

Fill the chilled glass with fresh ice cubes until almost full (about 1 cup of loosely packed ice). This keeps the proportions correct and the drink well chilled.

  3. 3

    Pour Prosecco

Pour 3 oz of chilled Prosecco gently into the glass over the ice. Pouring first helps preserve the bubbles and creates a nice layering effect.

  4. 4

    Add Aperol

Pour 2 oz of Aperol into the glass. Add it slowly so it layers slightly with the Prosecco.

  5. 5

    Top with soda

Add 1 oz of chilled soda water to the glass to give the spritz a light, effervescent finish. Adjust soda up to 1.5 oz if you prefer a lighter, bubblier drink.

  6. 6

    Stir gently

Using a bar spoon or the back of a spoon, give the drink 1–2 gentle turns to combine the Aperol, Prosecco, and soda without losing too much carbonation.

  7. 7

    Garnish and serve

Slip one fresh orange slice onto the rim or drop it into the glass as a garnish. Serve immediately while cold and bubbly.
