Method
Fruit & Base
Prepare fruit
Wash and dry all fruit. Peel and dice the mango into approximately 1/2-inch cubes until you have about 2 cups. Dice the pineapple into similar-sized pieces. Slice the banana into 1/4-inch rounds and, if using strawberries, quarter them. Place the diced mango, pineapple, banana slices and berries in a medium bowl.
Flavor the yogurt
In a small bowl, stir together the Greek (or coconut) yogurt, 1 tablespoon fresh lime juice, 1 teaspoon honey (or agave), the chopped mint leaves and a pinch of salt until smooth and evenly flavored.
Crunch & Toppings
Add crunch
Sprinkle about 1.5 tablespoons granola and 1 tablespoon toasted almonds over each bowl for crunch and texture.
Finish toppings
Divide the toasted coconut flakes (1 tablespoon per bowl) and the chia seeds evenly between the two bowls. If you like, add an extra drizzle of honey on top.
Dressing & Finish
Garnish and serve
Finish each bowl with a light squeeze of additional lime if desired, a sprinkle of the reserved chopped mint, and serve immediately so the granola stays crisp.
