Prepare the kiwi

Wash the kiwis under cool running water. Using a small paring knife or a spoon, peel each kiwi: trim both ends, insert the spoon between skin and flesh and rotate to remove the skin, or carefully slice off the skin with the knife. Slice each peeled kiwi into 1/4-inch (6 mm) rounds or into bite-sized wedges, depending on preferred presentation.

Prevent browning and sweeten

Place the sliced kiwi in a medium bowl. Drizzle with 1 tablespoon lemon juice and, if using, 1 teaspoon honey or maple syrup. Gently toss to coat the pieces evenly — the lemon juice brightens color and balances tartness.

Add mint

Stack the mint leaves, roll them tightly and slice into thin ribbons (chiffonade) or roughly chop. Sprinkle the mint over the tossed kiwi and gently mix to distribute the herb.

Optional Serving Additions

Serve with yogurt and granola (optional)

Spoon 1 cup yogurt into a bowl or divide between two bowls. Add half the prepared kiwi on top, sprinkle with 1/2 cup granola and 2 tablespoons chopped toasted nuts. Repeat for a second serving if making two portions. If serving as a simple fruit salad, omit yogurt and granola and serve kiwi mixture chilled.

Chill and store

If not serving immediately, cover the bowl tightly and refrigerate for up to 24 hours. The lemon will slow browning, but kiwis are best within a day. Stir gently before serving.
