Cook the bacon
Preheat the oven to 400°F (200°C). Arrange 12 slices of thick-cut bacon in a single layer on a rimmed baking sheet lined with foil or parchment. Bake 15–20 minutes, turning the pan once halfway, until bacon is crisp and evenly browned. Transfer to a paper-towel-lined plate to drain.
Prepare tomatoes and lettuce
While bacon cooks, slice 2 ripe tomatoes into 1/4-inch thick slices. Rinse and dry 8 romaine leaves and set aside. Season tomato slices lightly with 1 tsp salt and 1/2 tsp black pepper; let sit briefly to draw out flavor.
Toast the bread
Butter one side of each of the 8 bread slices (about 2 tbs total). Heat a large skillet or griddle over medium heat. Toast buttered sides down until golden brown, 2–3 minutes per side, or toast to preference in a toaster or oven.
Avocado Spread
Make the spread
Halve and pit 1 ripe avocado reserved for the spread. Scoop flesh into a bowl and mash with a fork until mostly smooth with a few small chunks. Add 1 tbs fresh lemon juice, 1/4 cup mayonnaise, 1/2 tsp minced garlic (or garlic powder), 1/4 tsp smoked paprika, 1/4 tsp salt, and 1/4 tsp black pepper. Stir until combined and adjust seasoning to taste. If you like a thinner spread, add 1–2 tsp water or more lemon juice.
Assembly & Finish
Assemble the BLTA Supreme: Spread a generous tablespoon of the avocado spread on the unbuttered side of 4 toasted bread slices (these will be the bottom slices). Layer on 2 romaine leaves per sandwich, 3–4 tomato slices, three slices of cooked bacon, and 4–6 avocado slices (or an extra spoonful of the mashed spread) per sandwich. Top with remaining romaine leaves if desired.
Press sandwiches lightly, cut each diagonally in half, and serve immediately while bacon is warm and bread is crisp. Serves 4.
