Preparation
Prepare Caramelized White Chocolate
Preheat the oven to 300°F (150°C). Spread white chocolate chips on a baking sheet and bake for 10-15 minutes, stirring every 5 minutes, until golden brown.
Mix Dry Ingredients
In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
Cream Butter and Sugars
In a large bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
Combine Mixtures
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in dark chocolate chips and caramelized white chocolate.
Chill and Bake
Chill the dough in the refrigerator for at least 30 minutes. Preheat the oven to 350°F (175°C). Scoop dough onto a lined baking sheet and bake for 10-12 minutes, until edges are set.
Cool and Serve
Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
