Method

Prepare rolls
Split the ciabatta rolls horizontally. Lightly toast cut sides in a skillet over medium heat for 1–2 minutes until just golden.
Mix spreads
In a small bowl combine mayonnaise and Dijon mustard. Spread about 1/2 tablespoon of the mayo-mustard mixture evenly on the bottom half of each roll and 1/4 tablespoon on each top half.
Butter and toast (optional)
Melt the unsalted butter in the skillet and brush a little on the toasted cut sides for extra flavor. Return rolls to skillet cut-side down for 30 seconds if you prefer crispier bread.

Assemble cheese layers
Place two slices of cheddar on the bottom half of each roll, then stack warmed turkey (about 75 g per sandwich) and one slice of provolone over the turkey. Add a layer of ham (about 50 g) and another slice of cheddar on top of the ham for melt balance.
Melt cheese
Place the assembled bottom halves with cheese under a broiler or in a preheated 180°C / 350°F oven for 2–3 minutes until cheese begins to melt. Watch closely to avoid burning.

Prepare vegetables
While cheese melts, layer lettuce leaves, 2–3 tomato slices per sandwich, and thin rings of red onion on the top halves of the rolls. Sprinkle with a light pinch of salt and black pepper.
Add pickles and pepperoncini
Place two dill pickle slices and 1 sliced pepperoncini on each sandwich bottom or top according to preference.

Make quick vinaigrette
In a small bowl whisk together olive oil, red wine vinegar, salt, and 1/4 teaspoon black pepper. Drizzle about 1 teaspoon of this vinaigrette over the tomato slices on each sandwich top to add brightness.
Finishing & Serve
Final assembly
Place the melted-cheese bottom halves onto the prepared tops. Add cooked bacon (2 pieces per sandwich) inside. Press gently, sprinkle Italian seasoning over the top, and secure each sandwich with a toothpick through the center.
Slice and serve
Cut each sandwich in half crosswise if desired. Serve immediately while cheese is warm, with extra pickles or chips on the side.
