Chill and prepare
Place a shallow serving tray or platter in the refrigerator for 10–15 minutes. Fill a second large tray with crushed ice to hold the shucked oysters.
Clean shells
Rinse oyster shells under cold running water and use a scrub brush to remove grit and barnacles. Pat dry with a towel.
Shuck oysters
Hold an oyster flat-side up on a towel, hinge pointing toward you. Insert an oyster knife into the hinge, twist gently until it pops, then slide the blade along the top shell to sever the muscle. Remove and discard the top shell. Slide the blade under the oyster meat to free it from the bottom shell while keeping the oyster level to retain its liquor. Transfer each shucked oyster to the ice-filled tray, nestling shells into ice so they sit flat and steady.
Reserve oysters
Keep the oysters on ice and refrigerated until ready to top (up to 1 hour). Squeeze a little lemon juice over any oysters that appear dry, but do this sparingly to preserve brine.
Sardine Topping
Prepare sardines
Open the sardine cans and drain oil into a small bowl; reserve 1–2 tablespoons of the oil for the topping. Gently transfer sardine fillets to a cutting board.
Flake sardines
Using a fork, break the sardines into small, bite-sized flakes, removing any small bones you notice. Aim for small pieces that will sit easily on an oyster without overwhelming it.
Mix topping
In a small bowl combine the flaked sardines, reserved olive oil (about 2 tbs), finely minced shallot, chopped capers, chopped parsley, lemon zest, lemon juice, fleur de sel, black pepper, and chile flakes if using. Stir gently to combine. Taste and adjust seasoning — add a touch more lemon or salt if needed. The mixture should be moist but not soupy.
Warm (optional)
If you prefer a slightly warm topping, briefly warm the sardine mixture in a small skillet over low heat for 30–45 seconds just to take the chill off; do not cook — you want the sardines still delicate. Alternatively serve cold for a brighter finish.
Assemble & Serve
Top oysters
Using a small spoon, place about 1 teaspoon of the sardine topping onto each shucked oyster, spreading slightly but leaving the oyster liquor visible. Aim for about 24 teaspoons total (one per oyster).
Garnish
Scatter microgreens or a pinch of chopped chives over the oysters for color and freshness. Add an extra crack of black pepper or a tiny pinch of flaky salt to taste.
Serve
Arrange the oysters on the chilled serving platter over crushed ice. Provide lemon wedges and cocktail forks. Serve immediately so oysters remain cold and the topping retains its fresh texture.
Timing & safety note
Consume oysters within 1 hour of shucking for best texture and safety. Discard any oysters with off smell or that do not close prior to shucking. Keep below 40°F (4°C) at all times.
