Mojito Syrup & Prep
Make Quick Mojito Syrup
Combine 0.5 cup granulated sugar and 0.5 cup water in a small saucepan. Warm over medium heat, stirring until sugar fully dissolves. Bring just to a simmer for 30–60 seconds, then remove from heat and let cool to room temperature. This yields about 3/4 cup syrup. Cool completely before mixing cocktails.
Juice & Prep Limes
While the syrup cools, juice enough limes to yield 0.75 cup fresh lime juice (about 4 medium limes). Reserve 4 lime wedges for muddling/garnish. Chill the juice briefly if desired.
Building Individual Mojitos
Prepare Glasses
Use 4 highball glasses (or similar). Divide the 24 mint leaves evenly so each glass receives 6 leaves. Place 6 mint leaves into the bottom of each glass along with one reserved lime wedge.
Muddle
Add 3/4 ounce (about 22 ml; equivalent to ~1.5 tbsp) of the cooled mojito syrup to each glass (the 0.75 cup syrup divided among 4 glasses). Add 3/4 ounce (about 22 ml) fresh lime juice to each glass (the 0.75 cup divided among 4). Gently muddle the mint leaves and lime wedge a few times — press to release oils and juice but avoid shredding the mint so it doesn't become bitter.
Add Rum & Ice
Divide 2 cups white rum among the 4 glasses (0.5 cup or 4 fl oz / ~120 ml per glass). Fill each glass with crushed ice almost to the top (about 1.5 cups crushed ice per glass).
Adjust & Garnish
Taste and add a dash of Angostura bitters to each if desired (a few drops or up to 1/8 tsp per glass) and additional simple syrup to taste if you prefer sweeter. Garnish each mojito with a sprig of mint and a lime wedge on the rim. Serve with a straw and enjoy immediately while cold and effervescent.
Batch Prep Notes (if serving larger crowd)
To scale the recipe for a pitcher: combine cooled mojito syrup, lime juice and rum in a pitcher in the ratio used above (for each 1 cup rum use ~3/8 cup syrup and 3/8 cup lime juice). Keep chilled and add club soda and crushed ice to individual glasses when serving to preserve fizz. Lightly stir before serving.
