Combine Cider and Water

Chill the hard cider thoroughly before starting. In a large pitcher, pour 6 cups of dry hard cider and add 1 cup of cold water to slightly open the flavor and moderate carbonation. Stir gently once to combine.

Taste and Adjust

Taste the diluted cider. If it feels too blunt, add 1 tablespoon fresh lemon juice to brighten acidity. If it tastes flat, reduce added water next time; do not add more carbonation. Add a pinch of salt to round flavors if desired and stir gently.

Clarifying & Flavor Adjustments

If you prefer a clearer presentation, dissolve 1 teaspoon of bentonite (or your chosen fining agent) in 2 tablespoons of warm water per package directions and stir into the pitcher. Let the cider rest in the refrigerator for 30–60 minutes to allow particulate to settle, then gently pour off for serving, avoiding the sediment.

For each serving, place a thin apple slice and a small thyme sprig in the glass. Pour the prepared cider gently over the garnish. Serve cold.
