Tacos

    Marinate the Rockfish

    In a bowl, combine olive oil, lime juice, salt, and black pepper. Add the rockfish fillets and coat them evenly. Let marinate for 20-30 minutes.

    Grill the Rockfish

    Preheat the grill to medium-high heat. Grill the marinated rockfish for approximately 3-4 minutes per side, or until cooked through and flaky.

    Warm the Tortillas

    In a skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Assemble the Tacos

    Once the rockfish is grilled, flake it into bite-sized pieces and distribute it among the warmed tortillas.

Pico de Gallo

    Prepare the Pico de Gallo

    In a mixing bowl, combine the diced tomatoes, red onion, cilantro, minced jalapeno, lime juice, and salt. Mix well and let sit for 10 minutes to allow flavors to meld.

Chipotle Coleslaw

    Make the Coleslaw

    In a large bowl, mix together the shredded cabbage, grated carrot, mayonnaise, minced chipotle, lime juice, and salt. Toss until well combined and refrigerate until ready to use.

Chips and Salsa

    Serve the Chips and Salsa

    Open the bag of tortilla chips and pour the salsa into a serving bowl. Arrange the chips alongside the salsa for dipping.
