Crust Preparation

    Make the dough

    In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add the egg yolk and water

    Stir in the egg yolk and ice water until the dough comes together. Do not overmix.

    Chill the dough

    Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Roll the dough

    Preheat the oven to 375°F (190°C). On a floured surface, roll out the chilled dough to fit a 9-inch tart pan.

    Bake the crust

    Transfer the rolled dough to the tart pan, trimming any excess. Prick the bottom with a fork and bake for 20-25 minutes until golden brown. Let it cool.

Custard Preparation

    Heat the milk

    In a saucepan over medium heat, bring the milk to a simmer, stirring occasionally.

    Whisk egg yolks and sugar

    In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until well combined.

    Combine mixtures

    Once the milk is simmering, gradually whisk it into the egg mixture to temper the eggs.

    Cook the custard

    Return the mixture to the saucepan and cook over medium heat, stirring constantly until the custard thickens and starts to bubble, about 5-7 minutes.

    Finish the custard

    Remove from heat and stir in the vanilla extract and butter until smooth. Let it cool slightly.

Assembling the Tart

    Fill the crust

    Pour the custard into the cooled tart crust, smoothing it out with a spatula.

    Add the fruits

    Arrange the seasonal fruits on top of the custard in an appealing pattern.

    Glaze the tart

    In a small saucepan, heat the apricot jam until melted. Brush it over the fruits to give a shiny finish.

    Chill and serve

    Refrigerate the tart for at least 1 hour before serving to set the custard.
