Method
For the Curried Cauliflower
- 1
Prepare the Cauliflower
Preheat the oven to 425°F (220°C). Cut the cauliflower into florets and place them in a large mixing bowl.
- 2
Season the Cauliflower
Drizzle the olive oil over the cauliflower florets. Add curry powder, salt, black pepper, and garlic powder. Toss well to ensure the florets are evenly coated.
- 3
Roast the Cauliflower
Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until golden brown and tender. Remove from the oven and allow to cool.
For the Hummus
- 4
Prepare Hummus Ingredients
In a food processor, add canned chickpeas, tahini, lemon juice, garlic clove, water, olive oil, and salt.
- 5
Blend the Hummus
Blend on high speed until smooth and creamy. If the hummus is too thick, add a bit more water to reach desired consistency. Taste and adjust seasoning if necessary.
