Preparation

Tortilla Chips

1. Prepare Tortilla Chips

Spread tortilla chips on a large baking sheet in an even layer.

Braised Barbacoa

2. Prepare Barbacoa

In a slow cooker, combine beef chuck roast, chopped onion, minced garlic, beef broth, lime juice, chipotle peppers, ground cumin, dried oregano, salt, and black pepper.

3. Cook Barbacoa

Cover and cook on low for 8 hours or until the meat is tender and shreds easily.

4. Shred Barbacoa

Remove the beef from the slow cooker, shred it with two forks, and return it to the sauce in the slow cooker. Stir to combine.

Pico de Gallo

5. Prepare Pico de Gallo

In a bowl, combine diced tomatoes, diced onion, chopped cilantro, lime juice, and salt. Mix well and set aside.

Chipotle Crema

6. Make Chipotle Crema

In a small bowl, mix sour cream with finely chopped chipotle pepper, lime juice, and salt to taste. Set aside.

Guacamole

7. Prepare Guacamole

In a bowl, mash ripe avocados. Stir in lime juice, salt, garlic powder, and chopped cilantro until well blended.

Assembly

8. Assemble Nachos

On a large platter, layer the tortilla chips with shredded barbacoa, pico de gallo, guacamole, chipotle crema, and dollops of sour cream. Serve immediately.
