Bagel Preparation

Activate Yeast
In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Once the yeast mixture is frothy, add it to the flour mixture and mix until a dough forms.

Knead Dough
Turn the dough onto a floured surface and knead for about 10 minutes until the dough is smooth and elastic.

First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.

Shape Bagels
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and then poke a hole in the center to form a bagel shape.

Boil Bagels
In a large pot, bring water to a boil and add baking soda. Boil each bagel for about 1-2 minutes on each side, then remove and place on a baking sheet.

Bake Bagels
Preheat the oven to 425°F (220°C). Bake the bagels for 20-25 minutes or until golden brown.

Prepare Cream Cheese
In a mixing bowl, combine the cream cheese, chopped chives, garlic powder, salt, and black pepper. Mix until well combined and smooth.

Once the bagels are baked and slightly cooled, slice them in half and spread a generous amount of the cream cheese on each half.
