Preparation
Rinse the chicken livers under cold water and pat dry thoroughly with paper towels. Trim away any connective tissue, greenish bits, and large fat pieces. Drying livers well helps prevent excess liquid and ensures a smooth texture.
Bring the unsalted butter (6 tbsp) out of the fridge so it is slightly softened for sautéing. Measure the whiskey, heavy cream, and other ingredients so they are ready.
Cooking the Livers
Sauté aromatics
In a large skillet over medium heat, melt 2 tablespoons of the butter. Add the finely chopped shallots and sauté until translucent, about 3–4 minutes. Add the minced garlic and cook another 30 seconds until fragrant. Add the thyme leaves and bay leaf.
Cook livers
Increase heat to medium-high and push aromatics to one side. Add remaining 4 tablespoons butter. When butter foams, add the trimmed livers in a single layer, spacing them so they brown rather than steam. Sear without moving for about 1–2 minutes per side until browned outside but a touch pink in the center (internal temperature ~140°F/60°C). Total cook time should be about 4–6 minutes depending on liver size. Do not overcook — overcooked livers become grainy.
Deglaze and flame (optional)
Remove pan from heat. If using cognac/brandy, add 1 tablespoon to the pan and carefully return to very low heat to deglaze, scraping brown bits. If you are comfortable and want a flambé, tilt the pan and ignite briefly with a long match to burn off alcohol (optional). Alternatively, stir in the cognac without ignition.
Add whiskey
Stir in the 3 tablespoons of whiskey and let it simmer a few seconds to meld flavors. Allow alcohol aroma to mellow for 30–60 seconds off heat. Remove and discard the bay leaf.
Purée & Finish
Transfer the cooked livers and aromatics (including all butter in the pan) to a food processor or blender while still warm. Add the heavy cream, salt (1 1/2 tsp), and black pepper (3/4 tsp). Work in short pulses then blend on medium-high until completely smooth. Scrape down sides as needed. Taste and adjust seasoning — add up to another 1/4–1/2 tsp salt or a pinch more pepper if desired.
For an ultra-silky texture, press the puréed mixture through a fine-mesh sieve into a bowl using a spatula, discarding any fibrous bits. This step is optional but recommended for a classic pâté mouthfeel.
Seal & Chill
Pour the 2 tablespoons of melted butter over the top of the pâté in an even layer to create a seal and prevent discoloration. Scatter flaky sea salt (1/2 tsp) and a sprig of thyme on top for presentation, if using.
Cover tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight. Chilling allows flavors to meld and the texture to firm up.
Serve
Remove pâté from refrigerator 15–20 minutes before serving to take the chill off. Serve with toasted baguette slices or crackers. Provide extra flaky sea salt on the side and garnish with thyme sprigs if desired.
