Pat the duck breasts dry with paper towels. Trim any loose connective tissue but leave the skin and a thin layer of fat intact.

In a bowl, dissolve 1 tbs kosher salt and 1 tbs brown sugar into 2 cups of cold water. Add crushed peppercorns, thyme sprigs, and smashed garlic. Submerge the duck breasts in the brine, cover, and refrigerate for 30–45 minutes. This firms the meat and seasons it through without over-salting.

After brining, remove duck breasts, rinse lightly under cold water, and pat thoroughly dry. Let them rest at cool room temperature for 15 minutes while you prepare the rub and smoker. Score the skin in a crosshatch pattern with a sharp knife, cutting only through the skin and fat (not into the meat), spacing lines about 1/2 inch apart.

Rub & Finish Seasoning

Combine 1 tbs brown sugar, 1 tsp smoked paprika, and 1 tsp ground black pepper in a small bowl. Rub the mixture evenly over the skin side of each duck breast, pressing lightly into the scores. Leave the flesh side unseasoned or just a light pinch of salt; the brine has already seasoned the meat.

Smoking & Glaze

Prepare your smoker or a grill set up for indirect smoking and preheat to 225–250°F (105–120°C). If using a gas or charcoal grill, set up a foil tray of soaked applewood chips over direct heat or use a smoker box.

Place soaked applewood chips on the heat source and allow smoke to develop. Place the duck breasts skin-side up on the smoker rack. Smoke at 225–250°F until the internal temperature reaches 115–120°F (46–49°C) for medium-rare (approximately 35–45 minutes depending on breast size). Use a probe thermometer inserted into the thickest part of the meat.

While the duck smokes, make the glaze: in a small saucepan combine 1/4 cup dry white wine or apple juice, 2 tbs maple syrup, 1 tsp soy sauce, and 1/4 tsp freshly ground black pepper. Bring to a gentle simmer and reduce until slightly syrupy, about 4–6 minutes. Remove from heat and set aside.

When the duck reaches target temperature (115–120°F), remove from smoker. Brush the skin lightly with the maple glaze. Reserve remaining glaze for serving.

Pan Sear / Finish & Serve

Heat a heavy skillet (cast iron preferred) over medium-high heat until hot. Add 1 tsp neutral oil and let it shimmer. Place the duck breasts skin-side down and press gently with a spatula to maintain contact. Sear until the skin is deeply golden-brown and crisp, 2–4 minutes. If excessive fat renders, carefully pour off excess into a heatproof container but leave enough fat to brown the meat.

Flip the breasts and add 1 tbs unsalted butter to the pan. Baste the meat with melted butter for 30–60 seconds to finish cooking. Check temperature — you’re aiming for 125–130°F (52–54°C) for medium-rare to medium. Remove the breasts at 125°F to allow carryover to reach about 130°F.

Transfer the duck to a cutting board and let rest loosely tented for 6–8 minutes. While resting, sprinkle the flesh lightly with 1/2 tsp sea salt to finish and brush again with remaining glaze if desired.

Slice the duck breasts thinly across the grain. Arrange on a warm plate, spoon any resting juices and extra glaze over the slices, and garnish with microgreens or chopped parsley and lemon wedges on the side. Serve immediately.
