Bring cheeses to room temperature

Remove all cheeses from refrigeration 30–60 minutes before serving so their flavors and textures open up. Soft cheeses like Brie can be closer to 30 minutes; aged and firm cheeses benefit from about 45–60 minutes.

Prepare cheese shapes

Leave one soft cheese whole (Brie) and score a few shallow cuts on top for easy spreading. Cut aged cheddar into 1/4-inch slices or 1/2-inch cubes. Slice Manchego into thin wedges. Crumble or provide a small knife for the blue cheese. Arrange cheeses on the board with some space between varieties.

Fan or fold prosciutto into gentle ribbons; fold salami and chorizo into quarters or roll slices into loose cylinders. Place meats in small clusters near cheeses where they pair well (e.g., prosciutto near Brie, chorizo near Manchego).

Slice the baguette on a diagonal about 1/4-inch thick. If you prefer crostini, brush slices lightly with rosemary-olive oil and toast in a 375°F (190°C) oven for 6–8 minutes until just crisp. Place crackers in small stacks or fanned out on the board for easy grabbing.

Rinse grapes and pat dry; leave some on the stem for visual appeal and separate some into small bunches. Core and thinly slice apple and pear just before serving to prevent browning — toss slices with a few drops of lemon juice if you need to hold them longer than 15 minutes. Assembly & presentation

Select a large wooden board or platter. Start by placing the bowls of jam, honey, mustard, and olives at spaced intervals. Add cheeses next, giving each cheese breathing room. Tuck meats in groups adjacent to complementary cheeses. Fill remaining gaps with bread/crackers, clusters of fruit, pickles, nuts, and dried fruit. Garnish with rosemary sprigs and a few extra whole nuts or grape sprigs for height. Provide separate knives/spreaders for each cheese and small tongs or toothpicks for olives/pickles.

Label cheeses if desired so guests know what they are sampling. Keep the board at room temperature and refresh honey or crackers as needed during service. For leftovers, rewrap cheeses separately and refrigerate; allow them to come back to room temperature before serving again.
