Prepare the Coconut Curry Sauce

In a saucepan over medium heat, combine coconut milk and red curry paste. Stir well and bring to a simmer. Cook for about 5 minutes until slightly thickened. Season with salt and pepper to taste. Remove from heat and set aside.

Preheat the Oven

Preheat your oven to 475°F (245°C) or according to your pizza dough instructions.

Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add sliced onions, bell peppers, and carrots. Sauté until the vegetables are tender, about 5-7 minutes. Remove from heat.

Assemble the Pizza

Roll out the pizza dough on a floured surface to your desired thickness. Spread the coconut curry sauce evenly over the dough. Layer the sautéed vegetables on top, followed by the shredded mozzarella cheese.

Bake the Pizza

Transfer the pizza to a baking sheet or pizza stone and bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.

Garnish and Serve

Once the pizza is out of the oven, squeeze fresh lime juice over the top. Sprinkle shredded cabbage and toasted cashews. Slice and serve hot.
