Steak Tartare

Prepare the Beef
Finely chop the beef tenderloin into small cubes. Place it in a mixing bowl.

Mix Ingredients
Add egg yolks, Dijon mustard, Worcestershire sauce, capers, shallots, salt, and black pepper to the bowl with beef. Mix gently until well combined.
Roasted Bone Marrow

Preheat Oven
Preheat your oven to 450°F (230°C).

Prepare Bones
Season the beef bone marrow with salt and black pepper. Place the bones on a baking sheet.

Roast Bones
Roast the bone marrow in the preheated oven for about 15-20 minutes, until the marrow is soft and starts to caramelize.
Grilled Crostini
Basil and Cilantro Pesto

Prepare Ingredients
In a food processor, combine fresh basil leaves, cilantro leaves, pine nuts, and garlic cloves.

Blend Pesto
Blend the mixture while slowly drizzling in olive oil until smooth. Stir in grated Parmesan cheese, salt, and black pepper.
Tomato Chutney

Cook Chutney
In a saucepan over medium heat, combine chopped tomatoes, onion, brown sugar, apple cider vinegar, salt, and black pepper.

Simmer the mixture for about 20 minutes, stirring occasionally, until it thickens. Remove from heat and let cool.
