Ice Cream Preparation

    Scoop Ice Cream

    Scoop 2 cups of salted caramel ice cream into two serving dishes and place in the freezer to keep cold.

Meringue Preparation

    Prepare the Meringue

    In a clean mixing bowl, beat 2 large egg whites on medium speed until soft peaks form. Gradually add 1 cup of granulated sugar, continuing to beat until stiff peaks form. Stir in 1 tsp of vanilla extract.

    Top Ice Cream with Meringue

    Remove the chilled ice cream from the freezer and generously cover each serving with the prepared meringue, creating peaks for a dramatic effect.

Caramel Sauce Preparation

    Make Caramel Sauce

    In a saucepan over medium heat, melt 1 cup of granulated sugar until it turns amber in color. Carefully whisk in 4 tbsp of butter until melted, then slowly add 1 cup of heavy cream while stirring. Remove from heat and stir in 1 tsp of sea salt.

Flambé

    Flambé the Meringue

    Heat a small amount (1 oz) of dark rum in a separate pan. Carefully ignite the rum with a long lighter and pour it over the meringue-topped ice cream. Allow the flames to subside before serving.
