    Prepare the Steak

    Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

    Season the Steak

    Generously season both sides of the filet mignon with salt and black pepper, pressing the seasoning into the meat.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Sear the Steak

    Place the filet mignon in the hot skillet and sear for about 4-5 minutes on one side without moving it, until a nice brown crust forms.

    Flip and Add Butter

    Flip the steak and add butter, thyme, and garlic cloves to the pan. Cook for an additional 4-5 minutes for medium-rare, spooning the melted butter over the steak as it cooks.

    Check Doneness

    Use a meat thermometer to check the internal temperature. Aim for 130°F (54°C) for medium-rare.

    Once done, remove the steak from the skillet and let it rest on a plate for 5-10 minutes before slicing. This allows the juices to redistribute.
