    Prepare the Ingredients

    Start by preparing all the seafood and vegetables. Clean and slice the calamari, peel and devein the shrimp, and slice the zucchini and red bell pepper into thin pieces.

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

    Heat the Oil

    In a deep skillet or pot, heat the olive oil over medium-high heat until it reaches 180°C (350°F). You can test the oil's temperature by dropping a small amount of batter into it; it should sizzle and rise to the surface.

    Dredge the calamari, shrimp, zucchini, and bell pepper strips in the batter, allowing any excess batter to drip off. Carefully place a few pieces at a time into the hot oil, frying them for about 2-3 minutes or until golden brown. Do not overcrowd the pan.
