Deglaze the Pot
Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom. Let it simmer for about 5 minutes.

Combine Ingredients
Return the browned oxtail to the pot. Add the beef broth, thyme, and bay leaves. Bring the mixture to a boil, then reduce heat to low and cover. Simmer for about 2-3 hours until the oxtail is tender.

Prepare Crostini
While the soup is simmering, prepare the crostini. Preheat the oven to 400°F (200°C). Arrange the slices of bread on a baking sheet, drizzle with olive oil, and toast in the oven for about 5-7 minutes until golden brown.

Finish the Soup
Once the oxtail is tender, remove it from the pot, shred the meat from the bones, and return the meat to the soup. Discard the bones and bay leaves. Taste and adjust seasoning if necessary.
