    In a large, oven-safe pot or Dutch oven, combine the bacon strips, duck fat or olive oil, fresh thyme sprigs, peeled garlic cloves, black peppercorns, and salt.

    Place the pot over low heat and cook the bacon mixture gently. Keep an eye on it, ensuring it doesn’t come to a boil. Cook for about 2-3 hours, until the bacon is tender and has absorbed the flavors.

    After 2-3 hours, check the bacon for tenderness. It should be soft but not falling apart. If it needs more time, continue cooking, checking every 30 minutes.
