Prepare the Split Peas
Rinse the split peas under cold water to remove any debris or dust.

Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until the vegetables are soft and the onions are translucent.

Add Garlic and Seasonings
Stir in the minced garlic, dried thyme, black pepper, and bay leaves. Cook for an additional 1-2 minutes until fragrant.

Combine Ingredients
Add the rinsed split peas and water to the pot. Stir well to combine all ingredients.

Cook the Soup
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 45-60 minutes, or until the split peas are tender and have broken down.

Remove the bay leaves and taste the soup. Add salt to taste, adjusting the seasoning as needed.
