Prepare the Lobster Tails
Bring a pot of salted water to a boil. Add the lobster tails and cook for about 6-8 minutes, until the shells turn bright red and the meat is opaque. Remove from water and place in ice water to stop cooking. Once cooled, remove the meat from the shells and set aside.

Prepare the Mole Verde
In the same skillet with reserved bacon fat, add pepitas, minced garlic cloves, and diced jalapeño pepper. Sauté for about 3-4 minutes until the pepitas are toasted. Transfer to a blender, add fresh cilantro, lime juice, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.

Warm the Tortillas
In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until soft and pliable.

Assemble the Dish
On each tortilla, place a portion of lobster meat, drizzle with pepitas mole verde, and top with pieces of crispy confit bacon. Serve chilled.
