Prepare the Dashi

In a saucepan, combine dashi stock and red miso paste. Heat over medium until miso is dissolved, then set aside.

Sauté the Vegetables

In a skillet, heat sesame oil over medium heat. Add chopped shiitake mushrooms and sliced scallions. Sauté until mushrooms are tender, about 5 minutes.

Combine Ingredients

In a large bowl, combine sautéed mushrooms and scallions, cooked rice, and miso dashi. Gently fold in the scallops. Season with salt and pepper to taste.

Prepare for Baking

Preheat your oven to 375°F (190°C). Transfer the mixture into a greased baking dish.

Top with Breadcrumbs

Evenly sprinkle panko breadcrumbs and grated Parmesan cheese on top of the scallop mixture.

Bake

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the scallops are cooked through.
