Rinse the Pacific Beach oysters under cold water and shuck them carefully, keeping the oyster and its juices in the shell.

In a bowl, combine all-purpose flour, cornmeal, salt, black pepper, and paprika. Mix well.

In another bowl, whisk together the egg and milk until fully blended.

In a deep skillet or fryer, heat olive oil over medium-high heat until it reaches 350°F (175°C).

Dip each shucked oyster first in the egg wash, then dredge in the flour and cornmeal mixture, ensuring they are evenly coated.

Carefully place the coated oysters in the hot oil, frying them in batches to avoid overcrowding. Fry for 2-3 minutes on each side or until golden brown.
