Cedar Sour Preparation
Prepare Cedar-infused Rye
If you haven't done so, infuse the rye whiskey with cedar shavings for at least 24 hours. Strain before using.
Combine Ingredients
In a cocktail shaker, add the cedar-infused rye, fresh lemon juice, simple syrup, egg white, and fresh thyme leaves.
Dry Shake
Shake the mixture vigorously without ice for about 15 seconds to create foam from the egg white.
Wet Shake
Add ice cubes to the shaker and shake again for another 15-20 seconds until well chilled.
Strain and Serve
Strain the cocktail into a chilled coupe glass. Optionally, double strain through a fine mesh strainer for a smoother texture.
Garnish
Garnish with a sprig of thyme and a pinch of cedar shavings on top.
