Wine Preparation
1. Harvesting the Grapes
Select ripe Cabernet Sauvignon grapes from the Clare Valley. Ensure that the grapes are clean and free from any unwanted leaves or debris.
2. Crushing the Grapes
Crush the harvested grapes in a clean fermentation vessel to release the juice and pulp.
3. Fermentation
Add the yeast to the crushed grapes and mix thoroughly. Allow the mixture to ferment in a controlled environment at around 25°C (77°F) for 7-10 days, stirring daily.
4. Pressing
Once fermentation is complete, press the grapes to separate the liquid wine from the solid grape skins. Collect the wine in a clean container.
5. Adding Additives
Add tartaric acid and sulfur dioxide to the wine to stabilize and enhance its flavor.
6. Aging
Transfer the wine to an oak barrel or stainless steel tank for aging. Allow it to age for at least 12 months to develop complex flavors.
7. Bottling
Once the aging process is complete, filter the wine and bottle it. Seal with corks and label appropriately.
