Ice Cream Base (Mango)

Prepare mango puree
Peel and chop ripe mangoes and puree in a blender until completely smooth. Measure 2 cups of smooth mango puree and set aside. If needed, press through a fine sieve for an ultra-smooth texture.

Warm milk and sugar
In a medium saucepan, combine whole milk, 1 tablespoon granulated sugar (from base sugar), and salt. Warm over medium heat until it just begins to steam and small bubbles form around the edge (do not boil).

Temper egg yolks
Whisk the pasteurized egg yolks with the remaining 2 tablespoons sugar in a medium bowl until slightly thickened and pale. Slowly pour about 1/3 of the hot milk mixture into the yolks in a thin stream while whisking constantly to temper. Then pour the yolk mixture back into the saucepan with the remaining milk.

Cook custard
Cook the milk and yolk mixture over medium-low heat, stirring constantly with a wooden spoon or heatproof spatula and scraping the bottom, until the mixture thickens slightly and coats the back of the spoon (170–175°F / 77–80°C). Remove from heat immediately.

Finish base
Stir in the heavy cream, vanilla extract, invert sugar (if using) and the prepared mango puree. Blend with an immersion blender or whisk until fully combined and smooth. Taste and adjust salt or sweetness if needed.

Cool and chill
Strain the mixture through a fine mesh sieve into a clean bowl to remove any cooked bits. Cool to room temperature, then cover and refrigerate until thoroughly chilled, at least 4 hours or overnight. Chilling improves texture and flavor melding.

Churn
Once chilled, churn the mango custard in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency (usually 20–30 minutes).
Passion Fruit Sauce (Ripple)

Make passion fruit reduction
In a small saucepan, combine passion fruit pulp, 2 tablespoons sugar, and 2 tablespoons water. Bring to a gentle simmer over medium heat.

Thicken the sauce
Mix cornstarch with a teaspoon of cold water to form a slurry. Stir the slurry into the simmering passion fruit and continue cooking for 1–2 minutes until the mixture thickens slightly and becomes glossy. Remove from heat and stir in the lemon juice. Allow to cool to room temperature, then refrigerate until cold.

Optional seed removal
If you prefer a smooth ripple, press the cooled sauce through a fine sieve to remove seeds. For a textured tropical look, leave seeds in.

Assemble and ripple
Spoon about half of the churned mango ice cream into a freeze-safe container in an even layer. Dollop spoonfuls of chilled passion fruit sauce over the ice cream, spacing them evenly. Add another even layer of ice cream. Repeat with remaining passion sauce, using a knife or skewer to gently swirl the sauce through the ice cream to create ripples (avoid overmixing).

Top with papaya
Scatter the macerated (or plain) diced papaya over the top layer, distributing evenly. Reserve a few small pieces to garnish individual servings if desired.

Harden
Cover the container tightly and freeze the assembled ice cream for at least 4–6 hours, preferably overnight, until firm enough to scoop.
