    Heat water

    Measure 2 cups (about 475 ml) of fresh cold water. Heat water to just below boiling, about 175–185°F (80–85°C). If you don't have a thermometer, bring to a simmer and remove from heat as soon as small bubbles begin to form.

    Prepare tea

    Place 2 teaspoons of loose leaf green tea into a teapot, infuser, or a cup with a fine strainer. If using tea bags, use one standard green tea bag instead.

    Steep

    Pour the hot water over the tea leaves. Steep for 1.5 to 3 minutes depending on desired strength and the specific tea: 1.5–2 minutes for delicate Japanese greens (sencha), 2–3 minutes for Chinese greens. Avoid steeping longer than 3 minutes to prevent bitterness.

    Strain and serve

    Remove the tea leaves or strain the tea into a cup immediately to stop infusion. Taste and, if desired, stir in up to 1 teaspoon of honey or sugar. Add a lemon wedge to taste if you like a citrus note (note: lemon can change the flavor and may increase perceived astringency).

    Optional second steep

    If using good quality loose leaves, you can re-steep the same leaves. For the second infusion, increase water temperature slightly and steep for 30–45 seconds longer than the first steep. Discard after 2–3 total infusions or when flavor is spent.
