Base ice cream (vanilla & caramel)

Warm dairy
Combine whole milk, heavy cream, and 1/2 cup of the granulated sugar in a saucepan over medium heat. Warm until steam rises and small bubbles appear at the edges, about 6–8 minutes. Do not boil.

Whisk yolks
In a separate bowl, whisk the 4 egg yolks with the remaining 1/4 cup granulated sugar until pale and slightly thickened, about 1–2 minutes.

Temper and cook custard
Slowly pour one ladle (about 1/3 cup) of the warm milk mixture into the yolks while whisking constantly to temper. Continue adding warmed milk in a steady stream until about half of the milk mixture is incorporated. Pour the tempered yolk mixture back into the saucepan with the remaining milk and return to medium-low heat. Stir constantly with a wooden spoon or heatproof spatula, scraping the bottom, until the custard thickens enough to coat the back of the spoon (nappe), about 4–6 minutes. Do not let it boil.

Finish custard
Remove from heat. Stir in the 1 tsp vanilla extract and 1 tsp fine sea salt. Let cool 10 minutes, then chill thoroughly in the refrigerator until cold, at least 3 hours or overnight for best texture.

Churn with caramel swirl
Once cold, churn the custard in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency (usually 20–30 minutes). During the final 5 minutes of churning, drizzle in about 1/4 cup of the light caramel sauce to distribute ribbons. Transfer half of the churned ice cream to a freezer-safe container, drizzle with additional caramel (reserve remaining sauce), then add the remaining ice cream and swirl lightly with a spatula to create ribbons. Press a piece of plastic wrap directly onto the surface and freeze until firm, at least 4 hours.

Melt chocolate
Place the chopped semi-sweet chocolate and cocoa butter (or coconut oil) in a heatproof bowl set over a pot of gently simmering water (double boiler). Stir until fully melted and smooth. Alternatively, melt in short bursts in the microwave, stirring between bursts.

Form balls
Let the chocolate cool slightly but remain pourable. Spoon small drops (about 1/2 tsp each) onto a parchment-lined tray and allow them to set at room temperature or in the refrigerator until firm. For firmer, glossier balls, chill briefly (10–15 minutes). Keep refrigerated until assembly.

Cook toffee
Line a baking sheet with parchment. In a medium saucepan over medium heat, melt 4 tbs unsalted butter with 1/2 cup packed light brown sugar and 1/4 cup granulated sugar. Stir constantly until sugars dissolve and the mixture comes to a boil. Clip a candy thermometer to the pan and cook, stirring occasionally, until the mixture reaches 300°F (hard crack stage), about 6–10 minutes. If you don't have a thermometer, cook until mixture is dark golden and a small drop in cold water snaps into hard pieces.

Finish toffee
Remove from heat immediately. Stir in 1/2 tsp vanilla extract and 1/8 tsp fine sea salt. Pour the hot toffee onto the prepared baking sheet and spread thin with a spatula. If desired, sprinkle 1/2 tsp coarse sea salt over the top. Let cool completely until hard, about 30–60 minutes. Once set, break into small bite-sized pieces (about 1/4–1/2 inch). Store in an airtight container at room temperature until assembly.

Make caramel
In a medium, dry saucepan, combine 3/4 cup granulated sugar and 2 tbs water. Cook over medium-high heat without stirring (you can swirl the pan occasionally) until the sugar melts and turns an amber color, watching carefully to avoid burning, about 6–9 minutes.

Add butter and cream
Remove from heat and immediately add 4 tbs butter (careful, it will bubble). Stir until incorporated. Slowly add 1/2 cup heavy cream while stirring; mixture will bubble vigorously. Stir until smooth, then stir in 1/4 tsp fine sea salt. Let cool to room temperature. Reserve about 1/4–1/3 cup to serve with the ice cream and the rest to use during swirling as directed above.
Assembly & serving

Layer and add inclusions
When ice cream has firmed in the freezer, remove it about 5–10 minutes before scooping to soften slightly. Scoop or slice ice cream into bowls or cups. Sprinkle a generous handful (approx. 2–3 tbs) of broken toffee pieces over each serving and add 6–10 chilled chocolate balls per serving, pressing some lightly into the ice cream so they stick.

Drizzle and finish
Warm reserved caramel sauce slightly if thick, then drizzle 1–2 tbs over each serving. If you made extra caramel sauce, serve additional sauce on the side. Optionally, sprinkle a tiny pinch of coarse sea salt over each serving to enhance flavors.
