Smoked Salmon & Accoutrements
Prepare salmon
Remove the smoked salmon from the refrigerator about 20 minutes before serving so it comes to near-room temperature — this improves flavor and texture. On a large cutting board, gently open the slices into long strips for attractive folds and rosettes.
Arrange capers, onion, herbs
Place drained capers in a small bowl. Spread the thinly sliced red onion in a shallow bowl and cover with cold water for 5 minutes to mellow sharpness, then drain and pat dry. Combine chopped dill and snipped chives in a small dish for garnishing.
Season the salmon lightly with ground black pepper and scatter a few lemon zests over the top. Reserve lemon wedges for guests to squeeze as desired.
Bagels & Breads
Slice the bagels in half and, if preferred, lightly toast them just before serving so they are warm but still soft. Fan out toasted bagel halves, rye slices and crackers on large serving boards so guests can access all breads easily.
Spreads & Creams
Prepare plain and herbed cream cheeses
Transfer the softened plain cream cheese and herbed cream cheese to shallow bowls. Smooth the tops with a spatula and create a small indentation in each center to hold a drizzle of olive oil or a few capers if desired. For labneh, stir to loosen, then transfer to a bowl and drizzle 1 tablespoon of olive oil over it.
Place the unsalted butter on a separate plate, score the top with a fork for easier spreading and bring to the board with a small butter knife.
Salads & Pickles
Arrange cucumber slices, tomato wedges and mixed baby greens in separate piles or small bowls so guests can build open-faced bites. Place cornichons, pickled cabbage or beets in small bowls with serving forks.
Garnishes & Finishing
On the platter, artistically arrange smoked salmon in two or three piles or long ribbons. Surround salmon with bowls of capers, red onion, dill, chives, lemon wedges and the spreads. Sprinkle everything bagel seasoning lightly over cream cheeses or a few salmon pieces. Finish with a light drizzle of the remaining olive oil over the labneh and scattered microgreens if using.
