Method

Toast bread (optional)
If you prefer a lightly toasted sandwich, toast the two slices of rye bread until golden (about 1–2 minutes per side in a skillet or 2–3 minutes in a toaster). Let cool slightly.
Prepare spread
Spread 1 tablespoon dairy-free spread evenly over one slice of rye. If using, spread 1 teaspoon Dijon mustard over the other slice or mix the mustard into the dairy-free spread before spreading for a blended flavor.
Assemble pastrami
Arrange the 3 oz of sliced pastrami evenly on top of the spread on one slice of bread, overlapping slices for even coverage. If the pastrami is cold and you prefer it warmed, briefly heat in a skillet over medium heat for 30–60 seconds per side until just warmed through, then place on the bread.
Add tomato and lettuce
Place 2 slices of ripe tomato on top of the pastrami. Sprinkle 1/4 teaspoon salt and 1/8 teaspoon freshly ground black pepper evenly over the tomato to enhance flavor. Top with 2 trimmed lettuce leaves.
Finish sandwich
Place the second slice of rye, spread-side down, on top of the lettuce. Press gently to compact. If desired, cut the sandwich in half diagonally or down the middle for boxed presentation and tuck 2 pickle slices alongside.
Packaging for boxed lunch
Wrap the sandwich in parchment or sandwich paper to keep it secure in the box. Place chips and fresh fruit in separate compartments or small paper bags to avoid sogginess. Add the pickle slices in a small sealed container.

Portion 1 oz of chips into a small bag or sealed compartment. Place 3 oz of fresh fruit (grapes portioned or apple slices) in a separate container. If using apple slices, toss them briefly in a teaspoon of lemon juice to prevent browning before packing.
