Pickles & Prep

Quick pickled red onion

Place 1/2 cup thinly sliced red onion in a jar. Bring 1/2 cup water, 1/2 cup white vinegar (or apple cider vinegar), 1 tsp sugar and 1/2 tsp salt to a simmer to dissolve. Pour hot brine over onions, let cool to room temperature, then refrigerate at least 15 minutes (best 1 hour). Use 1 cup prepared; reserve any extra for another use.

Salted cucumber

Slice 1 cucumber into 1/4" rounds. Place in a colander, sprinkle 1 tsp kosher salt over slices and toss. Let sit 10 minutes, then gently squeeze or pat dry with paper towels to remove excess moisture and some salt. This softens and seasons the cucumber without making it soggy.

Hard-boiled eggs

Bring a small pot of water to a boil. Gently lower 2 eggs and boil for 9 minutes for firm yolks. Transfer to an ice bath for 5 minutes, peel, and halve each egg lengthwise.

Proteins & Cheese

Crisp pastrami

Heat a small skillet over medium-high heat. Add 1 tsp olive oil, then add pastrami slices in a single layer. Cook 1–2 minutes per side until edges are crisped and slightly caramelized. Transfer to a paper towel-lined plate.

Prepare smoked turkey and swiss

If smoked turkey is chilled, let sit 5 minutes to come closer to room temperature. Slice or tear into bite-sized pieces. Slice or shred 2 oz swiss cheese into thin strips or small pieces.

Everything Spice Crumble

In the same warm skillet used for pastrami (wipe out any excess burned bits, leaving some fond), add 1 tsp olive oil and 2 tsp everything bagel seasoning. Toast over low-medium heat for 30–45 seconds, stirring constantly, until fragrant. Remove from heat and let cool slightly. This will be sprinkled over the salad for texture and flavor.

Lemon Vinaigrette

In a small bowl or jar, combine 2 tbsp fresh lemon juice, 1 tsp Dijon mustard, 1 tsp honey, 1 minced garlic clove, 1 tsp salt and 1 tsp black pepper. Whisk or shake while slowly streaming in 3 tbsp extra-virgin olive oil until emulsified. Taste and adjust acidity or seasoning as desired.

Assemble Salad

Place 6 cups mixed salad greens in a large shallow bowl or divide between 2 plates (serves 2).

Evenly distribute smoked turkey (6 oz) and crisped pastrami (4 oz) over the greens.

Nestle halved hard-boiled eggs (2 eggs, halved) around the salad.

Arrange cherry tomato halves (8), sliced radishes (4), and salted cucumber slices (from 1 cucumber) across the salad for color and crunch.

Scatter pickled red onion (about 1/2 cup) and swiss cheese (2 oz) over the top.

Drizzle lemon vinaigrette evenly over the salad — start with about 2–3 tablespoons total, toss lightly, and add more if desired.

Finish by sprinkling the toasted everything spice crumble (2 tsp) over the salad and add a final pinch of freshly cracked black pepper and optional chopped parsley.
