Method

Prepare yeast

In a small bowl combine warm water (about 105–115°F / 40–46°C), sugar, and active dry yeast. Stir and let sit 5–10 minutes until foamy.

Make dough

In a large mixing bowl or stand mixer with dough hook, whisk together flour and salt. In a separate bowl, beat eggs with oil and honey. Add foamed yeast mixture and egg mixture to the flour. Mix on low until combined, then increase speed and knead 6–8 minutes until smooth and elastic. If dough is sticky, add flour 1 tbsp at a time (maintain about 4 cups total).

First rise

Shape dough into a ball, place in a lightly oiled bowl, cover with plastic wrap or a damp towel and let rise in a warm place until doubled, about 1–1.5 hours.

Form twists

Punch down dough and divide into 24 equal pieces (about 50–60 g each). Roll each piece into a 6–8 inch rope. For each twist, take two ropes, pinch ends together, twist them around each other and tuck ends under to seal. Place on parchment-lined baking sheets 1–2 inches apart.

Proof

Cover shaped twists lightly with a towel and let rise 25–30 minutes until puffy.

Egg wash & seeds

Whisk 1 egg with 1 tsp water. Brush each twist lightly with egg wash. Sprinkle sesame or poppy seeds as desired.

Bake

Preheat oven to 375°F (190°C). Bake the twists 14–18 minutes until deep golden brown and hollow-sounding when tapped. Rotate pans halfway through baking for even color.

Cool

Transfer twists to a rack and cool 10–15 minutes before serving. These are best fresh but can be stored in an airtight container up to 2 days; refresh in a 300°F (150°C) oven 5–7 minutes.

Deluxe Bagel Box — Assorted Bagels

Arrange bagels on a serving tray or in a box. Slice bagels horizontally just before serving if possible to preserve freshness. Provide tongs for guests.

If bagels were refrigerated or toasted: warm in a 350°F (175°C) oven for 5–8 minutes, or toast to preference just before serving.

Shmears & Toppings (for bagel box)

Transfer each spread (plain cream cheese, herbed cream cheese, smoked salmon spread) into small bowls or deli containers for the box. Keep chilled until service.

Arrange butter, jam and honey in small bowls or sealed containers. Place capers, sliced red onion, tomato and cucumber in separate small containers or on a small platter, so guests can assemble bagels to taste.

If using smoked salmon slices: fan the slices on a plate, and keep chilled; provide a separate utensil to avoid cross-contamination with cream cheeses.

Hot Coffee or Tea (serves 8–10)

For coffee: In a large coffee urn or 1.5–2 L drip brewer, add 0.75 cup (about 95 g) ground coffee and 1.6 L hot water. Brew according to your brewer's instructions. Keep on the warmer.

For tea: Bring 1.6 L water to a near boil. Place 10 black tea bags in a heatproof teapot or urn and pour hot water over them; steep 3–5 minutes depending on desired strength, then remove tea bags. Keep warm.

Set out sugar, milk/cream, stirrers, cups, lids if needed, and napkins. Keep hot beverages covered or on a warmer until service to maintain temperature.
