Make apple syrup

In a small saucepan combine 1/2 cup water and the granulated sugar. Warm over medium heat, stirring, until the sugar fully dissolves and the mixture just comes to a gentle simmer (about 2–3 minutes). Do not boil hard. Remove from heat.

Stir the fresh apple juice into the warm sugar syrup. Add the lemon juice, ground cinnamon (if using), and a pinch of fine sea salt. Taste and adjust: add up to 1 tablespoon more sugar if you prefer sweeter soda, or another 1/2 tablespoon lemon juice if you want more brightness. Let the mixture cool to room temperature (about 10–15 minutes).

Once cooled, chill the apple base in the refrigerator for at least 20 minutes if you want an extra-cold soda. Alternatively, proceed immediately and use plenty of ice when assembling.

Carbonation & Garnish

Assemble the soda

Fill a 16 oz glass with the ice cubes (about 1 cup). Pour the chilled apple base into the glass, leaving room for soda: about 3/4 cup of apple base (if you chilled more, adjust so total liquid before soda is ~6 oz).

Top gently with 6 oz chilled club soda or sparkling water. Stir once gently with a bar spoon to combine — avoid vigorous stirring to retain carbonation.

Garnish with an apple slice on the rim and an optional mint sprig. Serve immediately.
