Prepare components
Toast muffins
Split the English muffins and toast them until golden and crisp, about 3–4 minutes in a toaster or under a broiler. Set toasted halves aside, cut sides up.
Warm protein
If using carnitas: warm 1/2 cup in a small skillet over medium heat until heated through, about 3–4 minutes. If using ham: warm the slices in the skillet 1 minute per side. If using sausage patty: reheat cooked patty 2–3 minutes per side until hot. Keep warm on low heat while frying eggs.
If kimchi is very wet, drain in a fine sieve for a minute and roughly chop to make it easier to layer.
Fry eggs
Assemble sandwiches
Spread about 2 tablespoons (approx. 1/4 cup total across both muffins) of pimento cheese on the cut side of each bottom muffin half so it forms a creamy base.
Divide the warmed protein among the two muffin bottoms (about 1/4 cup carnitas, or 1 slice ham per sandwich, or 1 sausage patty sliced if desired).
Top the protein with 2 tablespoons of chopped kimchi per sandwich, distributing evenly. The kimchi adds acidity and heat; adjust amount to taste.
Place one fried egg on top of each kimchi-topped protein. If yolk is runny, position so it will break when bitten.
Scatter about 1/2 cup microgreens over the egg on each sandwich (about 1/4 cup per sandwich).
Spread a thin layer (about 1/2 tsp) of butter on each toasted muffin top and place on top of microgreens. Press gently to compact the sandwich slightly.
